I bought regular sugar and those same raisins last week at Costco too. Didn't buy chocolate, as I have about 25 lb of Callebaut block in my freezer.

You'll need a air tight bucket and a bunch of desiccant packets for that brown sugar or it'll turn hard as a rock as it soaks up moisture from the air.

Re: 100lbs of sugar

Last night I did in 6gal. buckets each ...red wheat, pearl barley, buckwheat groats, fructose, and brown rice with mylar bags and oxygen obsorbers. I'll be happy to get a year from the brown rice.
I have 5gal. of honey and probably half a 50lb sack of brown sugar left that is about 2 1/2 yrs. old...it has hardened up, but nowhere near "hard as a rock"

This morning I made fresh buckwheat flour and wheat flour with my nutramill , then mixed 50/50 for 1 1/2 cups of flour along with a fist full of blueberrys,1/4 cup wheat germ,1/2 cup oat bran,1/2 cup sour cream ,1 1/2 cup milk, 2 tbl. butter , 2 tbs brown sugar,2 tsp baking powder,1tsp baking soda,1/2 tsp. of salt and 2 eggs.As usual mix all wet ingrediants seperate then mix with dry. I gotta tell ya that concoction made for some tasty and nutritious pancakes....you could do the same with straight wheat or straight buckwheat and you could easily omit the sour cream and milk ...then just use straight buttermilk. You could leave out the wheat germ and oat bran also and use some rolled oats (like for oatmeal)....point is there's all kinds of variations and they all taste about the same.

I learned to cook from my mother who died last week, bless her soul, she taught me to cook with what you have....that and she never threw nothin out, our dog got slim pickens LOL

Desiccants absorb moisture like oxygen absorbers absorb oxygen. You see desiccant packs in lots of commercially packaged food. Little bags of silica gel granules that usually say "Do not eat" on them. Packed in cello packs of fresh pasta, for example.

http://waltonfeed.com/grain/faqs/ivd2.html

The article at the link above explains.

You want oxygen absorbers in most bulk foods that you put up for long term storage, and in anything that can be damaged by moisture, you also want desiccants. Sugar is hygroscopic, especially brown sugar. Desiccants will help to keep it dry, keep it from absorbing moisture and turning hard.

Re: 100lbs of sugar

I have read that if solidified brown/golden sugar is tied up in a cheese cloth and placed in a sieve, over a pot of boiling water, and covered with a pot lid, it soon softens, however hard. I read this in an old book on using wood cook stoves. You soften only the quantity you need for the recipe. The rest keeps better, rock hard, long term.

Also, these days, if you, immediately, on purchase use a food saver type gadget to seal the brown/golden sugar it will never get so hard.

Why on God's Earth would you spend good money on the most poisonous "food" you can put in your body?!?! Trust me, your body hates sugar. Only your tongue likes it.

Perhaps you're willing to spend your immortal life without sugar, but the rest of us are going to strive for a hundred years or so filled with cookies and happy tongues.:D

You won't make it to near 100 by eating that gunk. Once you go to whole, unprocessed foods, you will lose your taste for sugar. Craving of sweetness and sugary foods indicates something is not well inside you.

I know its not the best thing for me....But I like it

Maybe I don't wanna live to be 100 anyway...that could be costly

I have to say...I've personally found this very true. I used to drink a lot of soda (3-4 cans a day) and eat a lot of sweets. I cut it all out of my diet completely and after a while I no longer have any cravings for the stuff. If I eat cake, ice cream, etc. I'll have cravings for sweets for the next few days, then it goes away. I end up craving veggies, grains, and fruits (eat a mostly vegan diet now). Strange :smokin:.

The white sugar addiction is even more intense than nicotine, and withdrawal is painful. I had to do it once, and it was pure hell. While I still eat sugar, I've virtually eliminated the HFCS, which really cuts down on the sweets binges. And I'll always take sugar over any of the artificial sweeteners--those scare me.

Well, you CAN make whiskey without sugar, but the sugar sure makes it easier. :D
